| 7 | - 4 red Thai chilies, finely chopped (deseeded if you prefer less heat) |

| 8 | - 4 small banana shallots or 8 Thai shallots, peeled and thinly sliced (Ewa or mandoline) |

| 9 | - 30 cherry tomatoes, split |
|||
| 10 | - Zest and juice of 2 limes |
|||
| 11 | - 1 1/2-2 tsp sea salt flakes, to taste |
|||
| 12 | - 3 tbsp palm sugar or brown sugar |

| 13 | - Large handful of lemon basil, Thai basil or Italian basil leaves, roughly torn |

| 17 | - Place the chilies, shallots, tomatoes, lime zest and juice in a bowl. |

| 18 | - Season with the salt and sugar and leave to sit for 15 minutes to allow the flavours to combine. |

| 20 | - Stir the basil leaves through the sambal just before serving. |
