Dabu-Dabu Manado Sambal

Coconut and Sambal

Ingredients

  • 4 red Thai chilies, finely chopped (deseeded if you prefer less heat)
  • 4 small banana shallots or 8 Thai shallots, peeled and thinly sliced (Ewa or mandoline)
  • 30 cherry tomatoes, split
  • Zest and juice of 2 limes
  • 1 1/2-2 tsp sea salt flakes, to taste
  • 3 tbsp palm sugar or brown sugar
  • Large handful of lemon basil, Thai basil or Italian basil leaves, roughly torn

Preparation

  • Place the chilies, shallots, tomatoes, lime zest and juice in a bowl.
  • Season with the salt and sugar and leave to sit for 15 minutes to allow the flavours to combine.
  • Strain the liquid from the sambal through a sieve.
  • Stir the basil leaves through the sambal just before serving.
