| + | - 4 red Thai chilies, finely chopped (deseeded if you prefer less heat) |
| + | - 4 small banana shallots or 8 Thai shallots, peeled and thinly sliced (Ewa or mandoline) |
| + | - 30 cherry tomatoes, split |
| + | - Zest and juice of 2 limes |
| + | - 1 1/2-2 tsp sea salt flakes, to taste |
| + | - 3 tbsp palm sugar or brown sugar |
| + | - Large handful of lemon basil, Thai basil or Italian basil leaves, roughly torn |

| + | - Place the chilies, shallots, tomatoes, lime zest and juice in a bowl. |
