+ ## Dabu-Dabu Manado Sambal
+

+ ### Ingredients
+
+ - 4 red Thai chilies, finely chopped (deseeded if you prefer less heat)
+ - 4 small banana shallots or 8 Thai shallots, peeled and thinly sliced (Ewa or mandoline)
+ - 30 cherry tomatoes, split
+ - Zest and juice of 2 limes
+ - 1 1/2-2 tsp sea salt flakes, to taste
+ - 3 tbsp palm sugar or brown sugar
+ - Large handful of lemon basil, Thai basil or Italian basil leaves, roughly torn
+
+ ### Preparation
+
+ - Place the chilies, shallots, tomatoes, lime zest and juice in a bowl.
+ - Season with the salt and sugar and leave to sit for 15 minutes to allow the flavours to combine.
+ - Strain the liquid from the sambal through a sieve.
+ - Stir the basil leaves through the sambal just before serving.
