| 7 | - 1 1/4 cups plain Greek yoghurt |

| 8 | - 6 scallions, sliced thin |

| 9 | - 1/4 cup minced fresh cilantro |

| 10 | - 2 (15 oz) cans chickpeas, rinsed |

| 11 | - 2 large eggs |
|||
| 12 | - 6 tablespoons olive oil |

| 13 | - 1 teaspoon garam masala |

| 14 | - 1/8 teaspoon cayenne pepper |

| 15 | - 1 cup panko bread crumbs |

| 16 | - 1 shallot, minced |

| 22 | - Pulse chickpeas coarsely in food processor with shallot, garam masala, cayenne, and cilantro. |

| 23 | - Combine in large bowl with eggs, 2 tbsp oil, yoghurt, pinch of salt, scallions, and bread crumbs. |

| 24 | - Form mixture into patties/cutlets/galettes and fry in pan with oil at medium heat. |

| 25 | - Patties are done when well browned on each side. |

| 26 | - Serve with yoghurt like sauce-- tzatziki is a good option. |
