# Chickpea Galettes [Complete Mediterranean Cookbook](https://www.americastestkitchen.com/guides/the-complete-mediterranean-cookbook) ### Ingredients - 1 1/4 cups plain Greek yoghurt - 6 scallions, sliced thin - 1/4 cup minced fresh cilantro - 2 (15 oz) cans chickpeas, rinsed - 2 large eggs - 6 tablespoons olive oil - 1 teaspoon garam masala - 1/8 teaspoon cayenne pepper - 1 cup panko bread crumbs - 1 shallot, minced ### Preparation - Pulse chickpeas coarsely in food processor with shallot, garam masala, cayenne, and cilantro. - Combine in large bowl with eggs, 2 tbsp oil, yoghurt, pinch of salt, scallions, and bread crumbs. - Form mixture into patties/cutlets/galettes and fry in pan with oil at medium heat. - Patties are done when well browned on each side. - Serve with yoghurt like sauce-- tzatziki is a good option.
