| 25 | - Emulsion blender for chilies, shallots, garlic, brown sugar, molasses, soy sauce, fish sauce, and pinch of salt. Blend into smooth sauce. |

| 26 | - Get 2 tbsp of oil hot in a wok. Add a finely chopped shallot, then some of the blended sauce. |

| 27 | - Work rice, veg, and protein into the wok in batches. |

| 28 | - Add in more blended sauce and oil as needed. |

| 29 | - Add fried onions or finely sliced scallions to dish before topping with finely cut omlette. |
