| + | - 2 red Thai chiles , stemmed |
| + | - 2-3 large shallots , peeled |
| + | - 2 large garlic cloves , peeled |
| + | - 1 tbsp dark brown sugar |
| + | - 1 tbsp molasses |
| + | - 1 tbsp soy sauce |
| + | - 1 tbsp fish sauce |
| + | - Salt |
| + | - 2 large eggs |
| + | - Vegetable oil |
| + | - 1 1/2 - 2 cups basmati rice (cook for more) |
| + | - 1 1/2 - 2 cups frozen vegetables (carrots, beans, peas, and corn is a good mix) |
| + | - 1 1/2 - 2 cups protein of a sort-- cooked chicken, pork, shrimp, etc. |

| + | - 2 limes , cut into wedges |

| + | ### Preparation |

| + | - Emulsion blender for chilies, shallots, garlic, brown sugar, molasses, soy sauce, fish sauce, and pinch of salt. Blend into smooth sauce. |
| + | - Get 2 tbsp of oil hot in a wok. Add a finely chopped shallot, then some of the blended sauce. |
| + | - Work rice, veg, and protein into the wok in batches. |
| + | - Add in more blended sauce and oil as needed. |
| + | - Add fried onions or finely sliced scallions to dish before topping with finely cut omlette. |
| + | - Serve with sambals (badjak and manis are good). |
