Greek Chicken

Great quick marinade for chicken that is either baked or BBQed-- from an American Test Kitchen Magazine

Ingredients

  • 1/2 cup olive oil
  • 2 tbsp fresh rosemary (less if dried)
  • 2 tbsp fresh thyme (less if dried)
  • 5 cloves of garlic
  • Zest + juice of 1 lemon
  • 1 tbsp salt
  • 1 1/2 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 tsp pepper
  • 3 lbs chicken pieces (works great to pull skin from the pieces)

Preparation

  • Prepare the marinade by blitzing everything but the chicken with an immersion blender.
  • Pour over chicken in a freezer bag and marinade for between 30 minutes and 2 hours.
  • Bake at 425 until chicken registers 175 (30-35 minutes), or BBQ as one usually does chicken.
