Pancetta Sage Butter -- for Turkey
Ingredients
- 4 garlic cloves, peeled
- 150 g ounces thinly sliced pancetta
- 1/4 cup finely grated Parmesan cheese
- 1/4 cup (1/2 stick) unsalted butter, room temperature
- 2 tablespoons olive oil
- 2 tablespoons minced shallot
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh sage
- 2 teaspoons freshly ground black pepper
Preparation
- Blitz it all together in the food processor, and apply under and over the skin of the turkey
