Kale-Chorizo-Soup

Ingredients

  • 2-3 small potatoes, diced
  • 1 medium leek (onion OK), diced
  • 2 cloves of garlic, minced
  • 1-2 chorizo sausages, diced
  • 1 28oz can of crushed tomatoes
  • 4 cups chicken broth
  • bunch of kale, finely chopped
  • 1 can chickpeas, rinsed

Cooking and Preparation

  • Saute chorizo to soften and loosen flavours. Then add onions and garlic, followed by diced potatoes, then chickpeas, broth, and tomatoes.
  • Season with salt and pepper and simmer for 10 minutes.
  • Once potatoes are nearly done, stir in the kale. Soup is ready when kale is wilted and potatoes are cooked.
