Kale-Chorizo-Soup
Ingredients
- 2-3 small potatoes, diced
- 1 medium leek (onion OK), diced
- 2 cloves of garlic, minced
- 1-2 chorizo sausages, diced
- 1 28oz can of crushed tomatoes
- 4 cups chicken broth
- bunch of kale, finely chopped
- 1 can chickpeas, rinsed
Cooking and Preparation
- Saute chorizo to soften and loosen flavours. Then add onions and garlic, followed by diced potatoes, then chickpeas, broth, and tomatoes.
- Season with salt and pepper and simmer for 10 minutes.
- Once potatoes are nearly done, stir in the kale. Soup is ready when kale is wilted and potatoes are cooked.
